Dorothy's Moroccan Couscous Salad
ingredients
- 3/4 cup uncooked couscous
- Dressing:
- 2 tbsp parsley chopped
- 2 tbsp cilantro chopped
- 2 tbsp lemon juice
- 2 tsp olive oil
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/4 cumin
- 1/4 tsp salt
- 1 carrot finely chopped
- 1/2 red bell pepper diced
- 1/2 c cooked corn kernels
- 2 tbsp red onion chopped
- feta cheese crumbled
- cooked chick peas

Cook couscous according to package directions.

Combine first 8 ingredients.

Add carrot, pepper, corn and red onion.

Toss with couscous

Add Feta and chick peas.
- 6
Toss and serve.
