Roasted Onions with Balsamico
When onions are roasted they become quite sweet. This recipe counters that sweetness with a touch of sour balsamic vinegar to produce a rich and complex flavor.
ingredients
- 2 large yellow onions, unpeeled
- 4 teaspoons unsalted butter
- 8 teaspoons balsamic vinegar
- salt and pepper

Preheat oven to 350 degrees.

Cut the onions in half through the root and stem. Cut a tiny flat spot on the round side of each half so it will lay still in the baking dish

Butter a baking dish and place the onions evenly throughout it. Place a teaspoon of butter on each onion half. Season with salt and pepper. Bake covered for 50 minutes until onions are soft.

Remove the dish from the oven and sprinkle 2 teaspoons of vinegar on each onion half. Spread the onion sections to allow the vinegar to penetrate the onions.

Bake uncovered for an additional 15 minutes.

Allow onions to cool to room temperature before serving in their skins.
