Cheese Torte with Pesto
Nice one to take to a party
ingredients
- 1 1/2 lbs of cream cheese
- 1 1/2 lbs unsalted butter
- Pesto Filling:
- 3 1/2 cups lightly packed fresh basil
- 1 1/2 cups freshly grated Parmesan cheese
- 1/2 cup olive oil
- 6 Tbl pine nuts
- salt and pepper

Mix basil, Parm cheese and olive oil in a food processor until a paste forms. Stir in pine nuts and salt and pepper. One or two cloves of garlic can also be added.

Mix the cream cheese and butter separately in the processor.

Cut two large squares of cheesecloth. Moisten with water and wring dry. Place one on top of the other. Smothly line a mold with the cheesecloth (a clean flowerpot works well)

Spread cheese mixture, pesto, cheese mixture, pesto ending with cheese mixture until your mold is full.Place cloth on the top. Refrigerate 1 to 1 1/2 hours. Unmold...serve with French bread or crackers.
