Insalata di Riso
This is on my favorite summer dishes. To me the flavors just taste like Italy and each time I eat it I can close my eyes and think back to my year there.
ingredients
- 1 c. rice (brown or white)
- 1 lrg. can of Italian tuna in Olive Oil
- 2 tbsp. capers in salt, rinsed and chopped
- 1/3 c. green olives (Cerignola), chopped
- 1/2 c. chopped cherry tomatoes
- 3 tbsp. dry oregano
- dried pepper flakes (optional)
- salt and olive oil
directions

1) Prepare rice according to directions and let cool to room temperature.

2) Combine the rice with the rest of the indredients.
