KASEYS SALSA / DIANE'S SALSA
ingredients
- 10 lb tomatoes, chopped
- 6 medium onions, chopped
- 3 cups assorted bell peppers, chopped
- 12 Jalapeno peppers, choppped (use 5 or 6 for mild)
- 5 chili peppers, chopped
- 1 1/4 cup white vinegar (or less)
- 1/2 cup chopped cilantro
- 1/4 cup salt
- 1 1/2 tsp black pepper
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 2 Tbsp lime juice
- 3 cans tomato paste
- 1 Tbsp cumin

Combine all ingredietns, except onions, pepper and tomato paste. Cook up to 2 hours. Bring to a boil, reduce heat, and simmer 30 minutes, stirring occasionally. Add peppers and onion, simmer another 10-30 minutes. Add tomatoe paste, one can at a time, to thicken. SPoon into hot jars, cap and enjoy!

For cherry peach salsa, use 6 lbs tomatoes and add 3-4 lbs very ripe peaches.
