Vegetable Soup
Great recipe for lunch and to lose a few pounds!
ingredients
- 3 cups non fat broth(vegetable, chicken or beef)
- 2 cloves garlic,minced
- 1 tbsp. tomato paste
- 2 cups chopped cabbage
- 1/2 yellow onion
- 1/2 cup chopped carrot
- 1/2 cup green beans
- 1/2 cup zucchini
- 1/2 tsp. basil
- 1/2 tsp oregano
- salt and pepper

Spray pot with non stick cooking spray. Saute onions, carrots and garlic for 5 minutes.

Add broth,tomato paste,cabbage,green beans,basil,oregano, salt and pepper.

Simmer for 5-10 minutes until all vegetables are tender. Add zucchini and simmer another 5 minutes.

This is good to serve with a tsp. of grated cheese.
