Salmon Croquettes (Patties)
ingredients
- 2 (14.75 oz.) cans pink salmon
- 1/2 cup finely chopped onion
- 2 Tbsp. chopped fresh parsley
- 1 Tsp. lemon zest
- 2 tsp. lemon juice
- 1 tsp. salt
- 1 tsp. pepper
- 2 large eggs, lightly beaten
- 1/2 cup bread crumbs or saltine crackers
- 3/4 cup olive oil
- Lemon-Dill Sauce:
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 Tbsp. drained capers
- 4 Tsp. chopped fresh dill
- 1 1/2 tsp. lemon zest
- 4 tsp. lemon juice
- 1 tsp. white wine vinegar
- salt to taste

Drain salmon, remove skin and bones, and flake. Place salmon in a large bowl. Add onion and next 5 ingredients. Stir in eggs and bread crumbs. Shape salmon mixture into 6-8 patties. Cook, in 2 batches, in hot oil in a large skillet over medium-high heat 2 to 3 minutes on each sidse or until golden brown and crispy. Drain on a paper towel-lined wire rack.

Lemon-Dill Sauce:

Combine first 7 ingredients in a food process and pulse 2 to 3 times or until smooth, scraping down sides as needed. Season with salt and pepper.
