Cashew Chili

ingredients

  • 1 T olive oil
  • 1 stalk celery
  • 2 med onions
  • 1 green bell pepper
  • 2 cups canned kidney beans in water
  • 2 cans (or 3 whole) diced tomatoes
  • 1 t black pepper
  • 1 t minced basil
  • 1 t minced oregano
  • 1 T chili powder
  • 1/2 t. cumin
  • 1 bay leaf
  • 2 T apple cider vinegar
  • 1 cup cashews

directions

Chop celery, onions, bell pepper and saute in olive oil until tender. Add tomatoes and beans (with water) and all spices. Cover and simmer for 5-10 minutes. Add vinegar and cashews.
