Tortellini Soup

ingredients

  • 1 1/2 T olive oil
  • 1 1/2 T butter
  • 2 lg. garlic cloves, chopped
  • 23 oz. veggie broth
  • 6 oz. sliced mushrooms
  • 1 9 oz. package cheese tortellini
  • 1/2 small package baby spinach
  • freshly ground pepper
  • freshly ground parmesan cheese

directions

In soup pot, combine olive oil and butter. Add garlic. Saute briefly then add mushrooms. After ~ 5 min., add broth to pot and bring to boil. Add tortellini, cover pot partially and gently boil until tortellini are tender but still firm to bite, about 5 minutes. Turn off heat, add spinach, cover for two minutes. Top with pepper and cheese.
