Aunt Mildred's Thanksgiving Dressing for Roasted Turkey
Aunt Mildred was Mother’s older sister. And every family should have an Aunt Mildred. She lived life to the fullest and was a true joy to be around. She was not a particularly great cook but she was always asked to bring the dressing for the turkey at holidays. This is her recipe and it is superb.
ingredients
- 2 pans cooked cornbread
- 4-5 c. cubed day old bread
- 1 quart chicken broth or broth leftover from turkey
- 4 hardboiled eggs
- 2 onions, chopped
- 2 c. celery, chopped
- 1 stick butter or margarine
- 2 t. salt
- 2 t. pepper
- 4 T. poultry seasoning or to taste
- 2 t. ground sage
- 3 eggs
- 1 can evaporated milk
directions
Crumble the cornbread and bread cubes into a large bowl. In a saucepan,saute the onions and celery in the butter until tender and add them to the bowl. Add the chopped boiled eggs also. Beat the eggs with the milk and add all of the seasonings. Pour into the bowl and add the chicken or turkey broth until the mixture is very wet (it will firm up when it bakes). Put the dressing into a large roasting pan and bake at 350 degrees for about 50-60 minutes. Serve with turkey and gravy.
