Easy Egg Rolls
ingredients
- 1 T veggie oil
- 1 T grated ginger
- 2 garlic cloves
- 1 16 oz. package slaw mix (about 6 cups)
- 1 T soy sauce
- Salt and pepper
- Egg roll wraps (Nasoya)
directions
Preheat over to 375 and lightly oil a baking sheet. Warm a wok over medium-high heat. Add the oil and when it’s hot, sizzle the ginger and garlic for a few seconds. Add the slaw, soy sauce and salt and pepper, and stir-fry for 3-4 minutes (no longer or it will wilt in the oven later). Roll up a small amount of the slaw mixture in the wraps. Bake until golden, about 20 minutes.
