Black Bean and Red Onion Burgers
Daddy’s specialty, since we lived in Washington, DC in 2003.
ingredients
- 2 cups cooked black beans, rinsed and well-drained
- 1 egg, beaten
- 1/2 cup minced red onion
- 1 t. chili powder
- 1/2 cup breadcrumbs
- 1/3 cup veganaise
- 1/3 cup salsa
- oil for frying
- whole wheat burger rolls

Place beans in medium bowl and mash about 2/3 of them with a fork. Stir in egg, onion, chili powder, and breadcrumbs. Cover and chill 30-40 minutes.

Meanwhile, stir mayo until smooth. Stir in salsa and chill 30 min.

Form patties. Cook in lightly oiled skillet until golden brown on each side and hot throughout - at least 10 minutes. Serve on rolls with salsa mayo.
