Spinach Pie
ingredients
- 10 oz. filo pastry dough
- 1 large bunch spinach
- 13 oz. feta (or other) cheese
- 1 bunch shallots
- 2 med. onions
- 4 eggs
- 1/2 cup oil
- 1 t. salt
- 1/4 t. black pepper
- 5 oz. melted butter
directions
Wash and drain spinach. Cut into small pieces. Add chopped onions, shallots, and feta. Beat eggs, salt and pepper, and oil in a separate bowl, then pour over spinach. Mix well. Layer half packet of filo pastry dough in a casserole dish, making sure to butter every 2 layers.Place the egg mixture on top of the filo, then add the rest of the filo pack in the same manner on top of the egg mixture, finishing with a brushing of melted butter. Bake at 385 F for 45 minutes until golden brown.
