Simple Bean Loaf
A good way to use leftover grains and beans. Serve with tomato sauce or Patrick’s special bean burger sauce (salsa and veganaise.)
ingredients
- 1 cup cooked pinto beans
- 4 cups cooked brown rice
- 1 cup breadcrumbs or wheat germ
- 1 cup rolled oats
- 1 cup chopped nuts (optional)
- 1/4 cup oil
- 1 T. chopped parsley
- 1 T. chopped basil
- 1/2 t. thyme
- tamari
directions
Preheat oven to 350 F. Mash the pinto beans with the back of a fork and mix them will with all the other ingredients. Transfer to a large lightly oiled loaf pan and bake for 1 hour.
