Italian Fig Filled Cookies
ingredients
- Dough:
- 9 C flour
- 1 lb. butter
- 2 - 1/2 C sugar
- 6 tsp baking powder
- 3 large eggs
- 3 egg yolks (save whites for frosting)
- 2 tsp vanilla
- 3/4 tsp salt
- 1 C milk
- Mix all ingredients together to make a soft dough. Roll out about 1/8 inch thick. Spread filling in middle, fold dough over filling, slice into small cookies.
- Filling:
- 2 10oz. bags dried figs
- 1 24oz. bag prunes
- 1 pkg. dates (2 lbs)
- 12 oz. pkg. mini chocolate chips
- 2 C raisins
- 3 C walnuts chopped fine or toasted almonds
- 1 can applesauce (38 oz.)
- 2 tsp clover
- 2 tsp cinnamon
- 2 bottles dark Karo syrup
- Grind all fruit together in a meat grinder. Add the rest of the ingredients and mix well with your hands. Use about 1 teaspoon filling for each cookie.
- Icing:
- 3 egg whites
- 1 box powdered sugar
- 1/4 C milk
- Beat the egg whites until stiff, mix in powdered sugar and milk. Brush on each cookie and decorate with little candy sprinkles
