Italian Fig Filled Cookies

ingredients

  • Dough:
  • 9 C flour
  • 1 lb. butter
  • 2 - 1/2 C sugar
  • 6 tsp baking powder
  • 3 large eggs
  • 3 egg yolks (save whites for frosting)
  • 2 tsp vanilla
  • 3/4 tsp salt
  • 1 C milk
  • Mix all ingredients together to make a soft dough. Roll out about 1/8 inch thick. Spread filling in middle, fold dough over filling, slice into small cookies.
  • Filling:
  • 2 10oz. bags dried figs
  • 1 24oz. bag prunes
  • 1 pkg. dates (2 lbs)
  • 12 oz. pkg. mini chocolate chips
  • 2 C raisins
  • 3 C walnuts chopped fine or toasted almonds
  • 1 can applesauce (38 oz.)
  • 2 tsp clover
  • 2 tsp cinnamon
  • 2 bottles dark Karo syrup
  • Grind all fruit together in a meat grinder. Add the rest of the ingredients and mix well with your hands. Use about 1 teaspoon filling for each cookie.
  • Icing:
  • 3 egg whites
  • 1 box powdered sugar
  • 1/4 C milk
  • Beat the egg whites until stiff, mix in powdered sugar and milk. Brush on each cookie and decorate with little candy sprinkles

Bake 350° - 20 minutes
