Mustard Chicken

Serves 4

ingredients

  • 4 boneless, skinless chicken breast halves
  • 1 cup plain breadcrumbs
  • 1 tbsp oil (canola or olive)
  • 1/4 cup lowfat mayo
  • 1/4 cup Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp pepper

    Preheat oven to 375 degrees

    In a small bowl mix breadcrumbs, salt, pepper, and oil. Set aside.

    In another small bowl, mix mayo and mustard together. Set aside.

  • 4

    Spray 8x8 inch (or similar size) baking dish with non-stick spray and place chicken breasts in the dish. Spread mayo/mustard mix all over the tops and sides until they are well coated. Top liberally with the breadcrumbs.

    Bake for 22-25 minutes or until chicken is cooked through.
