Garden Quiche Lorraine

ingredients
- 6 slices bacon, cut in 1/2" pieces
- 1/2 cup whipping cream
- 1/2 cup small yellow onion, finely diced
- 3 egg yolks
- 1 pkg. (16oz.) frozen broccoli, carrots, & cauliflower mixture
- 1 egg
- 1/4 tsp. salt
- 1 pkg. (8oz.) cream cheese, softened
- 1/4 tsp. pepper
- 1 9" deep-dish pie shell

Preheat to 400°.

Place cookie sheet in preheated oven. Meanwhile, fry bacon in a skillet until browned and nearly crisp. Remove bacon and drain on paper towel. Cook onion in bacon grease until onion becomes translucent. Remove onion and drain on paper towel.

Microwave vegetables according to package directions. Beat cream cheese with cream, egg yolks, whole egg, salt and pepper until smooth and fluffy. Stir bacon, onion and vegetables into cheese mixture and then put mixture into pie shell. Bake 20 minutes. Reduce heat to 350F and bake 10 more minutes. Let stand 2 to 3 minutes before cutting.
