Baked Nectarines
ingredients
- 4 ripe nectarines
- A little oil
- 3-4 tbsp icing sugar
- Few knobs of butter
- 150ml double cream
- 250g mascarpone
- 1 tbsp amaretto liqueur (or milk)
- 50g amaretti biscuits, lightly crushed

1. Heat the oven to 200C/Gas 6. Halve the nectarines, prise out the stones, then place cut-side up on a lightly oiled baking sheet.

2. Dust the nectarines with the icing sugar and top each one with a knob of butter. Bake for 10-12 minutes or until the sugar topping has slightly caramelised. Place two nectarine halves on each shallow serving bowl and leave to cool slightly.

3. For the amaretti cream, whip the cream until soft peaks form. In another bowl, stir the mascarpone with the amaretto (or milk) to lighten it, then fold through the softly whipped cream. Fold through two-thirds of the crushed biscuits.

4. Top the baked nectarines with the amaretti cream and sprinkle over the remaining crushed biscuits. Serve at once.
