Simple buttermilk cornbread
ingredients
- 2 cups self rising buttermilk cornmeal
- 1 cup self rising flour
- approx. 2 cups buttermilk
- 4 tbls. canola oil
- salt to taste
- pepper to taste
directions
Mix cornmeal, flour, salt, and pepper. Add buttermilk to dry ingredients. Mix well. Add canola oil to iron skillet or 9x9 pan. Pour in mixture and bake at 450 degrees until golden brown. Take out of pan and turn over on its top. (This keeps it crunchy)

Goes great with chicken and dumplings, or almost any meal.
