Vegan Fudge Bars

I got this recipe when I worked at the Catacombs coffee shop in Madison. I am not a vegan but these are great no matter what!

ingredients

Dough:
  • 1 cup margarine
  • 2 cups brown sugar
  • 1 cup soy milk
  • 2 tsp. vanilla
  • 2 1/2 cups flour
  • 1 tsp. baking soda
  • 3 cups rolled oats
Fudge Sauce:
  • 1 cup unsweetened cocoa powder and 1/4 cup margarine
  • 1/2 cup soy milk
  • 2 tsp. vanilla
  • 2 cups sugar

    Cream sugar and margarine then add soy milk and vanilla. Add rest of dry ingredients.

    Spread over just half of the dough into a greased 9“x13” baking pan (it will be sticky)

    Melt the cocoa and margarine in a sauce pan then add the soymilk, vanilla, and sugar. Mix well. It should be thick and fudgy.

    Spread the fudge over the entire surface of the dough then place the remaining dough on top. (this can be tricky, think of making and placing gooey puzzle pieces over the whole pan)

    Bake at 350°F for about 25-30 minutes until the top is a bit brown.
