Balsamic Vinaigrette
A simple classic vinaigrette. This is a great jumping off point for other vinaigrettes. Simply substitute some part of the oil for other ingredients. Fruits like strawberries and lemon are good substitutions for part of the oil. If you go very sweet you may want to cut back on the mustard, but be careful; the main reason for using it is to improve the emulsion, so leaving it out can lead to vinaigrette separation after a while.
ingredients
- 1/4 C good balsamic vinegar
- 3/4 C good olive oil
- 1 clove minced garlic
- 1/8 tsp of salt
- 1/2 tsp of grain or dijon mustard.

Blend vinegar and mustard in a blender or in a bowl with a stick blender for 15 seconds. Add 1/4 cup olive oil while mixing for another 15 seconds.

Whisk in remaining oil and other ingredients until vinaigrette is smooth and even.
Optionally, add 1 teaspoon of lemon juice.
