LEMON CAPER CHICKEN

ingredients
- 1 chicken, cut up, or 2 to 3 lbs of favorite pieces
- 1/2 cup butter or olive oil
- 2 T lemon juice
- 2 T capers
- 1 clove garlic minced
- 1 t paprika
- 1 t salt
- 1/2 t pepper
- 8 oz mushrooms sliced (never done it this way but maybe it’s good)
- brown rice cooked
directions
Preheat oven to 350°. Arrange chicken pieces in a single layer in a shallow casserole. In a small saucepan, heat butter, lemon juice, capers, garlic, salt, pepper, and paprika, just to boiling point. Pour over chicken. Bake uncovered for 1 hour or until chicken is done. If you need more flavor or juices which I always do...I just throw in the whole little bottle of capers juice and all and/or add more lemon juice. Add cooked brown rice to serve.
