Apple Oatmeal Muffins
Yummy muffins that work for breakfast, brunch or a healthy dessert.
ingredients
- 1 cup coarsely chopped seeded apples (skin on)
- 1 tbsp butter
- 1 cup whole wheat flour
- 1 cup old fashioned oats
- 3 tsp. baking powder
- 2 tsp. cinnamon
- 1/4 tsp. ginger
- 1/8 tsp. cloves
- 1/2 tsp. salt
- 1 egg
- 1/2 cup milk
- 2/3 cup brown sugar
- 1/2 tsp vanilla

Preheat oven to 425; prepare muffin tins with nonstick spray or paper liners.

Melt butter in small skillet over low heat. Add apples and cook 5-7 minutes, until tender, but not mushy. Set aside to cool.

In medium bowl, combine flour, oats, baking powder, salt and spices.

In large bowl, beat egg and milk until well combined. Stir in sugar until dissolved; add vanilla.

Stir dry ingredients into egg mixture with as few strokes as possible. Fold in cooled apples.

Spoon batter into prepared muffin tins, to about 2/3 full.

Bake 15-18 minutes; cool on racks.
