Yellow Green Curry with Potatoes

ingredients

  • 1/4 cup canola oil
  • 2-4 cloves garlic sliced
  • 4-6 slices of fresh lemon grass
  • 2 Tbsp green curry paste
  • 1 tsp tumeric
  • 2 cans coconut milk
  • 2/3 cup chicken stock
  • 4 Tbsp brown sugar
  • 6 Tbsp fish sauce
  • 1 onion sliced
  • 1/2 red pepper sliced
  • 10-12 oz lg diced potatoes
  • 16 or chicken, tofu or shrimp
  • 1/4 cup thai basil leaves

directions

  • 1

    Place oil in pan with garlic, curry paste, tumeric and lemongrass. Let simmer on medium low heat for 4-5 minutes.

    Add coconut milk, chicken stock, brown sugar, fish sauce, vegetables, protein and basil leaves.

    Simmer for 15 minutes.

    Serve over rice
