Yellow Green Curry with Potatoes
ingredients
- 1/4 cup canola oil
- 2-4 cloves garlic sliced
- 4-6 slices of fresh lemon grass
- 2 Tbsp green curry paste
- 1 tsp tumeric
- 2 cans coconut milk
- 2/3 cup chicken stock
- 4 Tbsp brown sugar
- 6 Tbsp fish sauce
- 1 onion sliced
- 1/2 red pepper sliced
- 10-12 oz lg diced potatoes
- 16 or chicken, tofu or shrimp
- 1/4 cup thai basil leaves

Place oil in pan with garlic, curry paste, tumeric and lemongrass. Let simmer on medium low heat for 4-5 minutes.

Add coconut milk, chicken stock, brown sugar, fish sauce, vegetables, protein and basil leaves.

Simmer for 15 minutes.

Serve over rice
