Pumpkin Succotash W/ Pecans
ingredients
- 2 lb Bacon, Diced
- 2 lima beans
- 2 black eyed peas
- 8 lg onions chopped
- 1 cup Garlic Slices
- 3 Gallons Water
- 1 cup bacon fat
- 1 head celery chopped
- 4 red peppers diced
- 1 can pumpkin
- 1/2 cup salt
- 2 Tbsp cayenne pepper
- 2 Gallons corn, off the cob
- 1/2 cup fresh thyme
- 1/2 cup fresh sage
- 2 cup chopped parsley
- 1 pecans (TOASTED)

directions
lima beans & black eyed peas (soaked in hot water ) Sauté bacon until crispy. Drain fat. Sauté onions, garlic, celery ,red peppers & corn in bacon fat. add soaked beans pumpkin, salt, whole corn, dry thyme, dry sage, toasted pecans, cayenne, add chicken stock cook until beans are tender. add parsely last... top soup with toasted pecans
