Pumpkin Soup
ingredients
- 10 butternut squash
- 15 potatoes peeled
- 2 #10 cans pumpkin puree
- 1 cup olive oil
- 8 onions chopped
- 1/4 cup garlic minced
- 1 gallons apple cider
- salt & pepper
- 1 tsp cayenne
- 1 Tbsp cinnamon
- 1 bunch parsley chopped
- 2 Tbsp worschestshire sauce
- 2 cup maple syrup
- 2 qt heavy cream
- 4 cup sour cream
- 2 gallons water

directions
peel and learge dice raw squash set aside in a lg pot Sauté onion, garlic, cayenne, salt & pepper add diced squash, worschestshire, cider & parsley. add 2 gallons water bring to boil and simmer until squash & potatoes are very soft. puree and adjust s&p add heavy cream & sour cream
