  • 10 butternut squash
  • 15 potatoes peeled
  • 2 #10 cans pumpkin puree
  • 1 cup olive oil
  • 8 onions chopped
  • 1/4 cup garlic minced
  • 1 gallons apple cider
  • salt & pepper
  • 1 tsp cayenne
  • 1 Tbsp cinnamon
  • 1 bunch parsley chopped
  • 2 Tbsp worschestshire sauce
  • 2 cup maple syrup
  • 2 qt heavy cream
  • 4 cup sour cream
  • 2 gallons water
  • 50

directions

peel and learge dice raw squash set aside in a lg pot Sauté onion, garlic, cayenne, salt & pepper add diced squash, worschestshire, cider & parsley. add 2 gallons water bring to boil and simmer until squash & potatoes are very soft. puree and adjust s&p add heavy cream & sour cream
