Pea Soup
ingredients
- 2 Tbsp oilve oil
- 1 bag dried peas
- 1 1/2 cup carrots (sliced thin )
- 2 Celery Stalks (sm-med )
- 1 med onion
- 2 leeks just light green (cleaned,sliced )
- 3 cloves garlic (thin sm )
- 1/2 bunch fresh thyme
- 1 Tbsp dried oregano
- salt & pepper
- 1 ham bone
- chicken or vegetable bouillon

directions
heat oil chop-saute garlic-brown onions-transparent leeks 4-5 minutes add carrots add herbs, salt & pepper, wash & add Peas cover w/ water, add bouillon, ham. boil reduce heat cook stirring.occasionaly for 1 hour remove ham bone add celery simmer 30 minutes meanwhile remove ham from bone, cut into bite size pieces, then add to soup .
