Morocacn Lentil Soup
ingredients
- 1 cup lentils
- 6 cup cold water
- 1 Tbsp olive oil EV
- 1 med onion diced
- salt
- cayenne
- 1 sma carrot diced
- 1 celery rib diced
- 1 sm red pepper diced
- 1 tsp cumin seed, toasted and ground
- 1/8 tsp coriander
- 1/8 tsp tumeric
- 4 cloves garlic chopped
- 1 Tbsp ginger grated
- 1 8oz can tomatoes and juice
- 2 Tbsp cilantro chopped
- 1 tsp spicy sesame oil
directions
boil lentils until tender, about 20 minutes. when lentils are cooking, heat olive oil, add onion, 1/2 tsp salt and a pinch cayenne until soft, about 7-8 minutes. add diced vegetables, another 1/2 tsp salt and spices. cook 5 minutes longer, stir in garlic and ginger, cook another 2 minutes. add cooked vegetable mixture and tomatoes to lentils, cover and cook another 30 minutes. let sit, heat to eating temp and garnish with chopped cilantro.
