Minestrone Soup
ingredients
- 1/2 cup Olive Oil
- 1 Lb Chopped Bacon
- 6 cup White Beans (Cooked in Red Wine)
- 8 cup Potatoes, Peeled and Diced
- 8 cup Shredded Cabbage
- 8 Leeks (Sliced Fine)
- 8 Onions, Finely Diced
- 1/2 cup Garlic, Sliced
- 8 qrt Chicken Stock
- 8 qrt Water
- 4 cup Chopped Parsely
- Salt and Black Pepper
- 4 cup Pesto
- Fettuccini, cut into 1" Pieces

Sauté bacon in olive oil. When brown, add onions and garlic to Sauté until just brown. Add leeks, potatoes, cabbage, beans, leeks, stock and water. Bring to a simmer and cook 1 hour on low heat. Add salt and black pepper. Add the pesto (1 cup per gallon of soup) when heating soup. DON’Tbsp FORGET THIS. Add pasta to order.
