  • 15 Flank Steak
  • 1 cup chopped garlic
  • 1/2 cup black pepper
  • 1 cup chopped parsley
  • 1 cup chopped oregano
  • 2 cup sliced shallot
  • 4 cup soy oil
  • caramelized onions
  • roasted peppers
  • mesclun greens
  • Cracked pepper and red wine vinaigrette;
  • 1/2 cup red wine vinegar
  • 1/2 cup balsamic vinegar
  • 8 cup olive oil
  • 1/4 cup dijon mustard
  • 1/2 cup chopped basil
  • 1/4 cup chopped thyme
  • 1/2 cup cracked black pepper
  • 2 1/2 Tbsp salt
  • 3 egg yolks
  • 1 tsp sugar

    Marinate steak. Grill whole flank to very rare. Rest and slice thin on bias. rewarm to med rare and fan over dressed greens. sprinkle red peppers around salad and top with caramelized onion.

    VINAIGRETTE: Place all ingredients, except oil into food processor. Slowly drizzle in oil and form an emulsion. After all oil is emulsified into mixture, adjust consistency with water, if neccesary.
