Cream of Tomato & Spinach
ingredients
- 2 oz garlic chopped
- 4 red onions
- 1/4 cup olive oil
- 1 cup white wine
- 5 gallons of tomato juice (from salsa)
- 1 can of plum tomato
- 5 bunches flat spinach chopped
- 1 bunch basil chopped
- 2 qt milk
- 2 qt heavy cream
- 1 qt sour cream

directions
In a lg stock pot saute: garlic,red onions,olice oil. add white wine and deglaze (flame) add tomato juice, plum tomato,spinach,basil, simmer for 20 minutes remove from heat add milk,heavy cream,sour cream.
