oven poached halibut provencale
From the Complete CL cookbook serve with rosemary roasted potatoes and sauted spinach (w/ shallot and garlic)
ingredients
- 1 cup white wine
- 4 halibut fillets
- Cooking spray
- 4 cups fresh tomato, diced
- 1 cup chopped onion or shallot, sauté til soft
- 1/2 cup chopped fresh basil
- 3 tsp dried parsley
- 3 tablespoons kalamata olives, sliced
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 3 garlic cloves
- 1/4 dry breadcrumbs
- 2 tbsp grated parmesean cheese
- 1 tbsp olive oil

* preheat oven to 350

* spray baking dish with cooking spray. Place fish and wine in dish. Combine tomato, onion, basil, parsley, olives, olive oil, salt, pepper, and garlic in a bowl; spoon over fish. Bake at 350 for 35 minutes.

Turn on broiler

*combine breadcrumbs, cheese, and olive oil in a bowl. Sprinkle over tomato mixture and broil 1 1/2 min or until breadcrumbs are golden.
