Benita's Banana Nut Bread
My family loves banana nut bread during the Thanksgiving and Christmas holidays. I found this recipe and adapted it to work in Colorado’s high altitude. I can’t make this bread fast enough before the boys inhale it all. I hope you enjoy it as much as we have.
ingredients
- 2 c. all-purpose flour
- 1 tsp.baking soda
- 2 eggs
- 1/2 c. vegetable oil
- 1 tsp. vanilla extract (imitation is fine)
- 1 c. walnuts or pecans, chopped
- 1 1/2 c. sugar
- 1/2 tsp. salt
- 2 ripe bananas, mashed 1 c.
- 1/4 c. plus 1 T. buttermilk
directions
In large bowl stir flour, soda, sugar and salt. In another bowl mix eggs, oil, vanilla, and buttermilk. Put nuts in with buttermilk mixture. Pour buttermilk mixture with dry ingredients. Add mashed bananas. Pour into a greased 9x5x3 inch baking pan. Bake at 325 degrees for 1 hour and 20 minutes or until bread tests done. Cool on wire rack.
