Baked Sweet Potatoes with Molasses-Jalapeño Sour Cream
This is a great way to serve sweet potatoes when you are looking to accompany a dish that is lighter in flavor.
ingredients
- 4 sweet potatoes
- 1/2 cup sour cream
- 1 tablespoon molasses
- 1 jalapeño, or several Serrano chiles seeded and minced
- 1 teaspoon lime juice
- Salt
- Hot Sauce (optional)
- Butter
- 1/2 cup chopped green onions

Preheat oven to 450°.

Place scrubbed sweet potatoes on a baking sheet and roast in the middle of the oven 45 minutes until soft when pierced with a sharp knife.

Meanwhile combine sour cream and next 4 ingredients in a small bowl. Taste and add additional hot sauce to taste. Refrigerate sauce until ready to use.

Remove potatoes from the oven and remove the outer skins. Serve potatoes with butter and sauce. Top each potato with green onions.
notes
I invariably prefer Serrano peppers because they lack the harsh bitterness of Jalapeños. To make this a main dish, top the potatoes with crumbled bacon bits.
