Wheels of Steel
ingredients
- 1/2 cup butter
- 1/2 cup raw peanut butter
- 1 cup brown sugar
- 1 egg
- 1 teas. Vanilla
- 3/4 cup whole wheat flour
- 1/4 cup wheat germ
- 1/2 cup non-fat dry milk solids
- 3/4 teas. Sea salt
- 1/4 teas. baking powder
- 1/4 teas. baking soda
- 3 tablespoons milk
- 1 cup quick-cooking oats
- 1 cup raisins
- 3 tablespoons sesame seeds
- optional:
- 1/4 cup sunflower seeds
- 1/2 cup shredded coconut
- 1/2 cup chopped dates

Preheat oven 375°

Cream together butter, peanut butter, brown sugar, eggs, and vanilla.

Combine flour, wheat germ, dry milk, salt, baking powder, and baking soda; stir together lightly.

Add flour mixture to creamed mixture; stir.

Add together liquid milk, oats, raisins, (sunflower seeds, coconut, and chopped dates); mix well.

Depending upon what you add, you may want to increase the liquid a bit to make sure everything holds together.

Add oat& seed mixture to flour/creamed mixture combo; mix well.

Place a heaping tablespoon of the batter on an oiled baking sheet and spread into a circle about 4 1/2 inches in diameter. Sprinkle with 1 teas of sesame seeds.

Leave ample room for the cookies to spread. It may be wise to have only two on one large sheet.

Bake about 12 minutes or until done.

Cool on pan 5 minutes and then using a wide spatula transfer to a rack.

Makes about nine giant cookies.

Store in airtight container.

In the mid-1970’s, I somehow decided that we shouldn’t eat white sugar and made these cookies for Todd. He remembers them er, ah … fondly(?)
