Harvest Vegetable Beef Soup
A very hearty soup. A favorite!
ingredients
- 2-2.5 lbs beef shank or roast
- 3 cups V-8 juice
- 1 medium onion, chopped
- 4 tsp salt
- 1/4 tsp pepper
- 3 TBSP Worcestershire sauce
- 1 lb canned tomatoes
- 1 cup diced celery
- 1 cup diced carrots
- 1 cup diced potatoes
- 1 cup corn
- 2 cups red cabbage
directions
Combine meat, V-8 juice, onion, seasonings, and 6 cups water in a very large soup pot. Cover and simmer 2 hours. Cut up meat and skim off excess fat. Add vegetables. Cover and simmer 1 more hour.
