Black And White Bean Salad

ingredients

Bean Salad
  • 1 can black beans, rinsed and drained
  • 1 can navy beans, rinsed and drained
  • 1 C red onion, chopped
  • 1 C red bell pepper, chopped
  • 1 C cooked corn kernels
  • 1/4 C chopped cilantro or parsley
  • 1 C cumin vinaigrette
Cumin Vinaigrette
  • 1/2 C cider vinegar
  • 1 T Dijon mustard
  • 1 1/2 t ground cumin
  • 1 t minced garlic
  • 1 t black pepper, freshly ground
  • 1/2 t salt
  • 1 1/2 C olive oil

directions

Dressing makes 2 cups. Only use one cup for this recipe, and save one cup for something else.

notes

May be used as an appetiser with endive or corn chips.
