MERISSA'S SWEET POTATOE CASSEROLE
This was first made by me at Thanksgiving of 2008 for the first time. I found them to be quick, easy and tasty. Everyone enjoyed it!
ingredients
- 7 sweet potatoes peeled and quartered
- 1 cup brown sugar
- 1 cup granulated sugar
- 1/2-1 stick melted butter
- 1/2 cup milk
- 1 cup mini marshmallows
- large baking dish dalloped with butter.
directions

Boil potatoes about 20 minutes or until tender.

Mash by hand until thick and chunky.

Add the brown sugar,granulated sugar, the melted butter, and the milk. Mash until nice and creamy.

spoon mixture into large baking dish.

Cover with a sprinkiling of brown sugar and mini marshmallows.

Bake at 350° about 15-20 minutes or until the marshmallows melt and the sugar gets brown and crispy.
notes
Quartering the sweet potatoes makes them boil faster and more thoroughly.
