Arugula and Pear Salad
ingredients
- vinaigrette:
- 4 tablespoons olive oil
- 4 teaspoons red wine vinegar
- 1/2 teaspoon Kosher salt
- freshly ground black pepper
- baby arugula (half a bag)
- 1 pear sliced
- 1/2 red onion, sliced
- 1 oz. blue cheese
- almond slivers
directions
Wash arugula and place in bowl. Saute pear slices and sliced onion in vinaigrette until onion is translucent and wilted. Add blue cheese and let it melt a little. Pour over arugula, add almonds and serve.
