Roasted Potatoes
These are easy to make and you can begin roasting the potatoes while you prep the other food. This is a staple in our house. I have even made these to serve 100 guests.
ingredients
- Redskin potatoes
- Olive Oil
- Kosher Salt

Preheat oven to 400 to 450 depending on how quickly you want them to cook and doneness. I prefer mine a little crunchy so I roast at 450 for 1 hour.

Cut redskin potatoes into bite size pieces. Place in roasting pan. Coat with olive oil. Sprinkle with Kosher Salt.

I sometimes add fresh rosemary in the last 15 minutes. Soak rosemary in water before adding to prevent it from burning/drying out too much.

Roast for approximately 1 hour stirring every 15 minutes.
