Black Bean Chili with Ground Turkey
This is really yummy. It works well as an entree. It is best made with a slow cooker.
ingredients
- 1 1/2 pounds ground turkey
- 1 tablespoon olive oil
- 1 onion, diced
- 4 cloves garlic, minced
- 2 (15 ounce) cans black beans, undrained
- 1 (15 ounce) can kidney beans, undrained
- 1 (15 ounce) can corn, drained
- 1 (28 ounce) can crushed tomatoes
- 1 1/2 tablespoons chili powder
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- 1 tablespoon cumin
- 1 tablespoon dried jalapenos
- 1 tablespoon crushed red pepper
- 1 tablespoon red wine vinegar
- cheddar cheese, shredded
- red onion, diced

Heat the oil in a large heavy skillet over medium heat; cook onion and garlic until onions are translucent. Add turkey and cook, stirring until meat is brown.

While turkey is cooking, add the beans, corn, tomatoes, chili powder, oregano, basil, cumin, jalapenos, red pepper and vinegar to a slow cooker and turn it on to low setting.

Add the browned turkey, onions and garlic to slow cooker and cook for 4 hours, stirring occasionally.

Top with shredded cheddar and diced red onions to taste.

The chili can be cooked in 2 hours when using the high setting on the slow cooker.
