Potato Bacon Frittata
This was from a bed-and-breakfast I stayed at in Asheville, NC. It is fabulous for brunch.
ingredients
- 3 tablespoons butter
- 2 cups frozen Potatoes O’Brian (or any kind of potatoes diced up in tiny pieces)
- 6 large eggs, beaten
- 2 tablespoons milk
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled

Preheat oven to broil.

Melt butter in a 10” nonstick skillet over medium heat.

Add frozen potatoes, and cook 10 minutes or until lightly browned.

Combine eggs, milk, salt, and pepper, stirring with a wire whisk.

Pour over potatoes.

As mixture starts to cook, gently lift edges of frittata with a spatula, and tilt pan so uncooked portion flows underneath.

When all but center top is cooked, place in preheated broiler for a minute or so until top is set.

Cover with foil and let stand 5 minutes.

Sprinkle with bacon.
