Watermelon, Feta & Arugula Salad

ingredients

  • 4 cups watermelon cut into 1 inch cubes
  • 2 to 3 cups arugula leaves
  • 1 cup crumbled feta cheese
  • 1/2 small red onion thinly sliced
  • several glugs of good olive oil
  • several glugs of balsamic vinegar (preferably aged)
  • sea salt and freshly group pepper to taste

directions

  • 1

    Line serving plate or individual plates with arugula leaves, gently drizzle with a small bit of olive oil. Top with watermelon, feta cheese, and red onion slices.

    Just before serving, drizzle with balsamic vinegar and sea salt and pepper
