Watermelon, Feta & Arugula Salad
ingredients
- 4 cups watermelon cut into 1 inch cubes
- 2 to 3 cups arugula leaves
- 1 cup crumbled feta cheese
- 1/2 small red onion thinly sliced
- several glugs of good olive oil
- several glugs of balsamic vinegar (preferably aged)
- sea salt and freshly group pepper to taste

Line serving plate or individual plates with arugula leaves, gently drizzle with a small bit of olive oil. Top with watermelon, feta cheese, and red onion slices.

Just before serving, drizzle with balsamic vinegar and sea salt and pepper
