Texas Hash
ingredients
- 2 small onions, chopped
- 1 medium green pepper, shopped
- 1 1/4 C chopped celery
- 1-2 garlic cloves, crushed
- 2 lb. ground beef
- 8 oz. thin spaghetti
- 1 can tomatoes
- 1 tsp. chili powder
- 1-2 tsp. salt
- 1/4 tsp. pepper
- 1/2 C or more grated Cheddar cheese

Sauté onions, green pepper, celery and garlic until tender. Push to the side of the pan, and brown the ground beef. When browned, combine vegetables and meat. add can of tomatoes and chili powder,salt and pepper. Simmer 20 minutes. Prepare spaghetti according to package directions for al denté. Combine drained spaghetti and meat and vegetables. Adjust seasonings, if necessary. Pour into casserole dish. Top with cheese.

Bake at 300° until bubbly and cheese melts--45 minutes or so.

Mema says this is the exact same as her favorite casserole her mother used to make when she was little! Liz brought it to us when Ned was born.
