Mexican Corn Soup
ingredients
- 1 16 oz pkg corn
- 1 c chicken broth
- 1 4-1/2 oz can diceds green chilies
- 2 tbsp butter
- 1/2 tsp minced garlic
- 1 tsp oregano
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 c milk
- 1 c chopped cooked chicken
- 1 c chopped tomatoes
- 1c. montery jack cheese

In a blender combine 1/2 the corn and chicken broth, cover blend until smooth.

In a large sauce pan, combine corn puree, remaining corn, green chilies, garlic, salt, pepper. Bring to boil, reduce heat simmer uncovered for 15 min. Stir in Milk chicken, tomatoes and oregano, heat through. Remove from heat. Stir in cheese until melted
