Summer Orzo Pasta Salad
ingredients
- 1 c diced carrot
- 1 each red, yellow and orange bell pepper diced
- 1 red onion diced
- 1 to 1 1/2 c crumbled feta cheese
- 1/2 c chopped fresh basil (I sometimes do a combination of fresh basil and fresh mint)
- 1/2 c toasted pine nuts
- 1 lb box orzo pasta cooked al dente and drained
- Dressing Ingredients
- 1/2 c olive oil
- juice from 2 lemons
- Zest of one lemon
- 1 T lemon pepper
- 2 ts garlic salt (powder can be used as well, do not use fresh garlic)
- Salt and Pepper to taste\
directions
Mix all the pasta ingredients together and toss in dressing.
notes
These are all approximates. If you want more or less veggies you can adjust. I also will add grilled chicken if I want it to be more of a meal instead of a side dish.
