Split Pea Soup
Classic hearty pea soup.
ingredients
- 2 Tbsp olive oil
- 1 onion, diced
- 1 carrot, diced
- 1 stalk celery, diced
- 8 cups vegetable or chicken stock
- 1 1/2 cups green split peas
- 1 potato, peeled and diced
- 1 tsp rosemary
- 1 bay leaf
- 1 pinch cayenne pepper
- 1/2 tsp sea salt
- 1/2 tsp white pepper
- 1/2 tsp apple cider or red wine vinegar
- 4 rashers bacon, chopped

In a large soup pot, heat olive oil over medium heat. Add onion, carrot, celery and saute til soft.

Add the bacon and cook til browned. Add the peas and stock. Cook for 1/2 hour.

Add the potato and seasonings. Cook for an additional 15 minutes.

Remove bay leaf and serve.
