Herbed Mushroom Stuffing
This is a pretty standard stuffing recipe. For those of you that don’t like mushrooms - leave them out!!
ingredients
- 1 pounds unsliced country white bread cut into 1-inch cubes (about 17 cups)
- 4 tablespoons olive oil
- 1 pound Italian turkey sausage, casing removed
- 2 cups celery
- 2 cups chopped onions
- 1 pound crimini mushrooms
- 1 tablespoon fresh rosemary, chopped
- 3/4 teaspoon dried rubbed sage
- 1 tablespoon fresh oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup chicken broth
- 3 tablespoons brandy

Preheat oven to 350°F. Arrange bread cubes on 2 heavy large baking sheets. Bake until slightly dry, about 10 minutes. Cool completely.

Heat oil in heavy large Dutch oven over medium-high heat. Add onions, sausage, celery, mushrooms, oregano, rosemary and sage. Season with salt and pepper and cook until sausage is cooked through and onions are tender, crumbling sausage with fork and stirring occasionally, about 10 minutes. Transfer mixture to large bowl. Cool slightly. Add bread cubes to sausage mixture and toss to combine. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate.) Stir chicken broth into stuffing.

Bake in 350 degree oven for approximately 45 minutes.
