Roast Chicken & Pear Salad

This is a great summer meal. Easy to fix and full of short cuts to make lunch or dinner a breeze. The cooked supermarket rotisserie chicken makes this dish cost effective and easy.

ingredients

  • Vinaigrette:
  • 3 Tbsp sherry or balsamic vinegar
  • 2 Tbsp honey
  • 1 1/2 tsp Dijon mustard
  • 1/2 tsp Kosher salt
  • Coarsely ground black pepper
  • 6 Tbsp extra virgin olive oil
  • 2 pears, firm but ripe
  • 1 lrg head of red leaf lettuce(8 cu)
  • 1 sm red onion, thinly sliced
  • 3 cu shredded rotisserie chicken
  • 1/2 cu toasted pecans (or other nut)
  • Parmigiana Reggiano cheese, shaved
  • NOTE: Granny Smith apples are a good substitute if pears are not available.

    Assembly and pre-measure all ingredients.

    Combine first 5 ingredients for vinaigrette and set aside.

  • 3

    Peel, core and thinly slice the pears. Place them into a medium bowl and toss with 2 Tbsp of the vinaigrette.

    In a large bowl, combine lettuce, red onion and chicken shreds. Add remaining vinaigrette (or less to taste) and toss.

  • 5

    Onto 6 plates, arrange the lettuce mixture and top each serving with pears, toasted pecans and shaved cheese.
