Roast Chicken & Pear Salad
This is a great summer meal. Easy to fix and full of short cuts to make lunch or dinner a breeze. The cooked supermarket rotisserie chicken makes this dish cost effective and easy.
ingredients
- Vinaigrette:
- 3 Tbsp sherry or balsamic vinegar
- 2 Tbsp honey
- 1 1/2 tsp Dijon mustard
- 1/2 tsp Kosher salt
- Coarsely ground black pepper
- 6 Tbsp extra virgin olive oil
- 2 pears, firm but ripe
- 1 lrg head of red leaf lettuce(8 cu)
- 1 sm red onion, thinly sliced
- 3 cu shredded rotisserie chicken
- 1/2 cu toasted pecans (or other nut)
- Parmigiana Reggiano cheese, shaved
- NOTE: Granny Smith apples are a good substitute if pears are not available.

Assembly and pre-measure all ingredients.

Combine first 5 ingredients for vinaigrette and set aside.

Peel, core and thinly slice the pears. Place them into a medium bowl and toss with 2 Tbsp of the vinaigrette.

In a large bowl, combine lettuce, red onion and chicken shreds. Add remaining vinaigrette (or less to taste) and toss.

Onto 6 plates, arrange the lettuce mixture and top each serving with pears, toasted pecans and shaved cheese.
