Clambake in a Pan
I’ve modified this with repeated use. Can be made as individual foil packets, but just as good and easier to put it in a pan and everyone can take what they want.
ingredients
- corn on the cob (about 1 per person)
- potatoes - red or new are firmer and better than russet but any will do
- sausage - sweet, hot or chirizo depending upon how much heat you like.
- Shellfish - any will do (shrimp, clams, lobster tail etc)
- Seafood seasoning, I like Hatfields, or Old Bay.

Precook the corn a few minutes in the microwave or steamer. Precook potatoes in the microwave until somewhat tender (knive inserts without much resistance). Brown the sausage and remove. Clean the shellfish.

Put corn, potatoes, sausage in individual foil packets or in a pan. Top with the shellfish and sprinkle with the seafood seasoning (to taste). Pour enough beer, wine OR water over ingredients to have about 1/4 to 1/2 inch of fluid at the bottom of the pan. Cover tightly with aluminum foil and place on grill or in oven. Cook about 20 minutes until shellfish is cooked.
